Basil Brown Rice
I love fried rice! made with white rice, veggies, chicken or eggs, fried in oil definitely taste’s yummy but is certainly not healthy. I was wanting to have fried rice for a while and it had to be healthy and of course tasty. So I chose brown rice! “Brown Rice” – eeeks….I know that’s the feeling, but if you adapt to the taste, it’s not that bad.
I tried to throw in some fresh veggies and chose basil for its distinct flavour. This is what I did!
Cooked brown rice – 1cup
Onions – 1
Capsicum – 1
Red bell pepper – 1
Garlic – 4 cloves
Basil leaves – 1/4th cup
Chopped fresh red chillies – ½ tsp (you can substitute this with chille flakes)
Tom yum soup cube -1 (u can use the maggi chicken cube too)
Soy sauce – 1 tsp
Olive oil or canola oil – 1 tbsp
Salt to taste (the soup cube and soy sauce contain salt, adjust accordingly)
Finely chop the garlic and keep it aside. Cut the onions in chucks and separate the flakes. Chop the bell peppers in squares. Add oil in a pan and add the chopped garlic and fry it for a few seconds. Add rest of the vegetables along with the basil leaves and sauté for a while. Also add the tom yum soup cube and the cooked brown rice, with a dash of soy sauce. Keep sauteing for 2- 3 mins and it would be ready.
Ps: The tom yom soup cube gives a tangy flavour, if you don’t have tom yum cubes add chicken stock cubes or vegetable stock cubes. You can add any other veggies of your choice and also can top it with chicken or eggs.
